Poached Egg Salad – Another Paleo Way to Start Your Day!

Paleo Poached Egg Salad

Since this poached-egg salad only takes a few minutes to prepare, it makes a fantastic Paleo food choice for breakfast.

The What:

  • Microwave egg poacher like this one {affiliate link}
  • A very small amount of butter (less than ¼ teaspoon)
  • Two large eggs
  • Two tablespoons water
  • Salt (optional)
  • Pepper

 

The How:

  1. Using your index finger or the back of a teaspoon, add just a ‘smear’ of real butter to the bottom of each poaching cavity.
  2. Break a large egg into each dish.
  3. Add a pinch of salt (optional) and pepper to each egg.
  4. Add a tablespoon of water to each egg (very important!)
  5. Carefully close the poacher and place it in the microwave.
  6. Microwave eggs on high for 50 seconds.
  7. Carefully open the poacher (WARNING:  hot steam may burst out) to check for done-ness.
  8. If they are not done, then microwave them on high in short (10 seconds) intervals until eggs are cooked to your likeness.*
  9. Remove poacher from microwave.
  10. Carefully open the lid.
  11. Use a teaspoon to gently scoop out each poached egg.

 

Enjoy the eggs by themselves or, add them to a salad of mixed greens and your choice of toppings.

 

Suggested salad toppings:  tomatoes (sliced or whole grape tomatoes), ½ a ripe avocado, homemade oil + vinegar dressing, and another generous pinch of coarsely-ground  black pepper. Yum!

*(FYI:  I’ve never had to cook my eggs for more than 80 seconds for them to be done.  I like my yolks to be completely cooked (firm) but not hard.)

Pasta Salad Recipe — with Chicken

Here’s an Easy Pasta Salad Recipe.  This one with grilled chicken!

This  is one of the College Boy’s favorite foods.  He made a surprise trip home this weekend so we made a batch of Pasta Salad today and sent him back with a big container of it.

This recipe makes several servings of pasta salad.  Since it keeps for a few days in the refrigerator, we make it with an entire box of pasta.  It ALWAYS gets eaten up.  And, the dressing acts as a marinade, so this recipe tastes better the day after you make it.
