Keep it Simple!
Lunch (at work especially) doesn’t need to be complicated.
Who has time for that? Not me!
And I’m guessing you don’t either.
So, today I kept it super simple and went with a spinach salad.
I tossed an already-opened bag of spinach in my lunch bag this morning. Along with a few chopped radishes, a Granny Smith apple*, and the few grape tomatoes were still in the fridge.
My bottle of red wine vinegar is tucked away on my desk at work. Ready to grab and go as I head to the lunch room.
- A handful of fresh spinach leaves
- 1/2 a Granny Smith apple – roughly chopped
- 3 or 4 radishes – roughly chopped
- 5 or 6 grape tomatoes
- 1 tablespoon of red wine vinegar
- pepper – to taste
*If you’ve never had apples in your salad, you don’t know what you’re missing. Doesn’t really matter what kind, Granny Smith, Gala, McIntosh, whatever you like. Try it next time! It adds a whole new dimension to your salad-making repertoire. (And sometimes we need that to keep things changed-up a bit!)
